WATERMELON MOJITOS

It's summer, it’s hot out, and you’re thirsty. Who needs water when you can have this refreshing cocktail? 

Ingredients

  • 30 large fresh mint leaves, plus more for garnish 
  • 6 slices fresh watermelon, seedless
  • 12 oz light rum, such as Bacardi 
  • 8 tbsp freshly squeezed lime juice (4 limes)

Preparation 

If using a food processor (this option will be thicker and pulpier):

  1. Prepare food processor with fitted steel blade
  2. Remove rind from watermelon, place fruit in food processor and pulse until puréed to your desired consistency
  3. With your hands, coarsely tear mint leaves and place in food processor
  4. Add lime juice and rum, quickly pulse to mix ingredients
  5. Pour into a large pitcher and serve on ice with mint sprig for garnish

If using a juicer: 

  1. Remove rind from watermelon and juice fruit on low; pour into a large pitcher
  2. Coarsely tear the mint leaves, then use a mortar and pestle to mash them; add to pitcher
  3. Add lime juice and rum, and thoroughly stir
  4. Serve on ice with mint sprig for garnish

Tip: use a citrus juicer for the limes

Serves 6.
