GRANDMA'S GRILLED CHICKEN MARINADE

It can’t be described any other way: this recipe is as familiar as your grandma’s famous chicken dish made with an odd pairing of staple ingredients you always have on hand. Simply put, it works. Tender, flavorful, acidic; perfect for a casual grill-out with close friends or at home on a week night. With soy sauce, red wine vinegar, Worcester sauce, lemon juice, garlic - how could you go wrong? It's practically a family recipe.

Ingredients

  • 1.5-2 lb boneless skinless chicken tenders/thighs/breasts

  • Marinade

    • 1/2 cup vegetable oil

    • 1/4 cup low sodium soy sauce

    • 3 tbsp Worcestershire sauce

    • 1/4 cup red wine vinegar

    • 2 large lemons, zest and juice (zest first, juice second)

    • 1 1/2 tsp black pepper

    • 2 tbsp fresh parsley, chopped

    • 2 tbsp Dijon mustard

    • 1 tbsp garlic, chopped

    • Optional: 2 tbsp honey

Preparation

  1. Whisk together marinade ingredients in large bowl

  2. Add chicken to bowl, cover with Saran wrap

  3. Marinate for at least 30 minutes or up to 6 hours

  4. Heat grill to medium, between 375-425 degrees

  5. Cook on each side about 4-6 minutes, until fully cooked (165 degrees)

Tip: if cooking chicken breasts, flatten breasts with a rolling pin or meat mallet to a consistent thickness to ensure even cooking on the grill.

Serves 5-6.
