HEALTHY TURKEY BACON + VEG FRITTATA

Breakfast, lunch or dinner, this frittata is quick, healthy and delicious. Serve with a simple side salad with red wine vinegar and you’ve got it made.

Ingredients

  • 7 eggs, separated

  • 2 slices turkey bacon, cooked, chopped

  • 1/2 cup tomato, chopped

  • 1/4 cup red pepper, chopped

  • 1/4 cup onion, chopped

  • 3 tablespoons mozzarella (shredded or balls)

  • 1-2 tablespoons parmesan (shredded or grated)

  • 1 tablespoon parsley

  • 1/2 tablespoon extra virgin olive oil

  • Salt and pepper

Preparation

  1. Preheat oven to 350° F

  2. Heat olive oil in small pan over medium high

  3. Sauté onion and red pepper until onions are translucent, about 4 minutes. Season with salt and pepper

  4. Add tomatoes, turkey bacon and parsley to veggie mixture for 1 minute, then remove from heat

  5. In a large bowl, beat 3 whole eggs, 4 egg whites, salt and pepper until blended

  6. Add veggie mixture to egg mixture, along with mozzarella - mix together

  7. Pour mixture into a greased pie pan, then sprinkle with parmesan

  8. Put in pre-heated oven, bake for 11-14 minutes or until eggs are set

Serves 3.
