This grilled BBQ chicken recipe is sweet with a subtle kick from the cilantro (or perhaps more, depending on the type of BBQ sauce used).   


  • 1 lb boneless chicken breast, diced
  • 3/4 c barbecue sauce (your preferred), plus more if desired
  • 1/4 c fresh cilantro, chopped
  • 1/4 c red onion, minced
  • 1/2 red onion, chopped into 1" pieces
  • 1-2 green peppers, chopped into 1" pieces
  • 6 bamboo skewers, soaked


  1. Soak the bamboo skewers in water for 30 minutes, and heat grill to medium-high heat
  2. Mix cilantro, minced red onion, and barbecue sauce in a large bowl
  3. Add chicken to sauce mixture, let marinate for 20-30 minutes (up to 1 hour)
  4. Thread skewers green pepper, chicken, onion, chicken; discard remaining sauce mixture
  5. Lightly oil grill, and place skewers, cover
  6. Grill chicken for 7-10 minutes (turn once), or until juices run clear

Serves 4.
